砂肝は鶏の肝臓ではなく胃の部位。肝という漢字が入ることから勘違いされやすいが、鳥類の持つ砂嚢(さのう)という胃の一部、筋胃と呼ばれるもので、歯がない代わりに食べたものを砕くための器官。
